My argument in the summary was that linguistic evidence shows that Western *society* has been familiar with umami (via words like savory, meaty, brothy) for a long time, even if 19th century psychologists did not include it in their abstract theory of taste. But in retrospect, this is really about scholars recognizing it as a primary taste, not broader society having a mental concept of umami. So just don't use the word 'society'. undo Tag: Visual edit

Psychologists' belief in only 4 basic tastes has no bearing on whether broader society is *familiar* with the 5th taste. The fact that words like savory, meaty, and brothy exist in European languages conclusively demonstrates that the speakers were aware of the taste.
