The early years of Luby’s were exciting ones, as the cafeteria in San Antonio was followed by locations in Tyler, Harlingen, El Paso, and Beaumont, Texas. In 1959, driven by Bob Luby’s vision, those original partners joined together as shareholders in a new company, Cafeterias, Inc. Cafeterias, Inc. continued to grow, spreading to other Texas cities and locations in contiguous states. The first Houston location opened in 1965, using the name Romana Cafeteria. Growth took them beyond Texas as well, with cafeterias opening in Las Cruces, New Mexico in 1966 and later in Oklahoma in 1980. | |||
In 1973, Cafeterias, Inc. achieved another significant milestone when it became a publicly traded company. This initial public offering was followed by a secondary offering in 1978. Then, on February 22, 1982, Luby’s shares were listed on the New York Stock Exchange, with Bob Luby buying the first 100 shares. | |||
To honor Bob Luby’s legacy, vision, and determination, Cafeterias, Inc. in 1982 was renamed Luby’s Cafeterias, Inc. The Company grew at a steady pace in the 1980’s and by 1987, forty years after its founding, Luby’s had reached 100 units. The next 14 years for the Company would be a period of explosive growth, adding 131 units between 1987 and 2000. Many of these units were located outside of Luby’s core Texas markets, in states like Tennesse, Arkansas, Florida, Mississippi, and Arizona. | |||
By 2001, Luby’s was in search of new executive leadership. Challenged by the changing face of the restaurant industry and burdened by legacy costs associated with the expansion of the 1990’s, Luby’s looked to two successful Texas restaurateurs, Chris and Harris Pappas of Houston, Texas, to help guide Luby’s back to financial and operational strength. Upon arriving, the new management team focused immediately on improving food quality, developing new cooking techniques, strengthening customer service, and introducing new products. At the same time, management made the decision to close many of the out-of-state and underperforming units, bringing the focus back to Texas, Luby’s home base.
