Mostly I just correct spelling mistakes and typos as I come across them - one of the few things I'm actually any good at is spelling. But when I have the time I help cleanup miscellaneous articles, and enjoy learning new stuff along the way; I also indulge in a little anti-vandalism work, and enjoy learning a little more about human behavior along the way...
